- 200 grams mushrooms (washed, cleaned, and sliced)
- 1 large onion (finely chopped)
- 2 medium-sized tomatoes (pureed)
- 1 tbsp ginger-garlic paste
- 2-3 tbsp oil or ghee
- 1-2 green chilies (slit, optional)
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- ½ tsp turmeric powder
- ½ tsp red chili powder (adjust to taste)
- Salt to taste
- 2-3 tbsp fresh cream or cashew paste (for creaminess)
- ¼ cup water (adjust for desired gravy consistency)
- Fresh coriander leaves (for garnish)
Step 1 : Prepare the Ingredients:
- Wash and slice the mushrooms.
- Puree the tomatoes and finely chop the onion.
Step 2 : Sauté the Spices
- Heat oil or ghee in a large pan over medium heat. Once the oil is hot, add cumin seeds and allow them to splutter.
- Add the green chilies (if using) and ginger-garlic paste. Sauté for a minute until the raw smell disappears.
Step 3 : Cook the Onions
- Add the finely chopped onions to the pan and cook until they turn golden brown. Stir occasionally to avoid burning
Step 4 : Add Tomatoes and Spices
- Add the pureed tomatoes to the pan and cook for 4-5 minutes, until the oil starts separating from the masala.
- Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Stir well and cook the masala until it thickens and the oil begins to separate.
Step 5 : Cook the Mushrooms
- Add the sliced mushrooms to the pan and cook for 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and soften.
Step 6 : Make the Gravy Creamy
- Add fresh cream (or cashew paste) to the pan. Stir it well to combine and give the curry a creamy texture. If the gravy looks too thick, add water to achieve the desired consistency.
- Let the gravy simmer for 5-7 minutes, allowing the mushrooms to absorb the flavors and the gravy to thicken.
